Southwestern Chicken and Black Bean salad


Ingredients

  • 10 cups romaine lettuce , torn

  • 1 15 oz can black beans , rinsed and drained

  • 1 1/2 cups rotissiere chicken , cooked

  • 1 1/2 cups red and/or yellow cherry tomatoes , halved

  • 1/2 cup bottled reduced-calorie caesar salad
  • 2 teaspoons chili powder

  • 1/2 teaspoon ground cumin

  • 2 tablespoons fresh cilantro , snipped

  • 1/2 cup tortilla chip , broken


Directions


  • In a large bowl combine romaine, black beans, chicken, and tomatoes.
  • For dressing, in a small bowl whisk together salad dressing, chili powder,
  • and cumin. Pour dressing over salad. Toss lightly to coat.
  • Sprinkle with cilantro or parsley and tortilla chips.
